Easter Marshmallow!

This week we have been making marshmallow Easter biscuits. First we made the marshmallow, then we coloured desiccated coconut different colours, then piped the marshmallow onto milk arrowroot biscuits. Finally we sprinkled the coloured coconut onto the marshmallow to make them look like yummy Easter eggs.

Marshmallow Recipe:

1 1/2 cups of caster sugar

2/3 cup hot water

2 tablespoons of gelatine

2/3 cup cold water

1 teaspoon of vanilla extract

Place the caster sugar and hot water into a saucepan over a medium heat. Heat for 2-3 minutes until the sugar has melted.

Place the gelatine into the cold water and stir until there are no lumps. Add this to the hot sugar syrup. Continue to heat on the stove for 2-3 minutes.

Place the sugar syrup into a mixing bowl and allow to cool for 30 minutes.

Beat with an electric mixer for 8-10 minutes until white and thick. Add the vanilla and mix well.

Pour marshmallow into mould/tray to set for an hour, or into a piping bag to pipe onto biscuits. Cover with coconut once marshmallow is set.
